- 2 medium zucchini grated
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 large egg beaten
- ¼ cup milk
- 2 tablespoon olive oil for frying
Grate the zucchini and squeeze out excess moisture.
In a mixing bowl, combine grated zucchini, flour, baking powder, and salt.
Add the beaten egg and milk to the mixture. Stir until well combined.
Heat olive oil in a frying pan over medium heat.
Scoop spoonfuls of the mixture into the pan, flattening them slightly with a spatula.
Cook for 2-3 minutes on each side, until golden brown.
Remove from pan and drain on paper towels. Serve warm.
