  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 large egg beaten
  • ¼ cup milk
  • 2 tablespoon olive oil for frying

Instructions 

  1. Grate the zucchini and squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, flour, baking powder, and salt.
  3. Add the beaten egg and milk to the mixture. Stir until well combined.
  4. Heat olive oil in a frying pan over medium heat.
  5. Scoop spoonfuls of the mixture into the pan, flattening them slightly with a spatula.
  6. Cook for 2-3 minutes on each side, until golden brown.
  7. Remove from pan and drain on paper towels. Serve warm.
