Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 tablespoon Olive oil
  • 1 clove Garlic, minced
  • 4 cups Mixed greens
  • 1 cup Cherry tomatoes, halved
  • 1 tablespoon Lemon juice
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes per side.
  4. In a large mixing bowl, combine mixed greens and cherry tomatoes.
  5. Add cooked shrimp to the salad.
  6. Drizzle with lemon juice and season with salt and pepper to taste. Toss to combine.
  7. Serve immediately.
