Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 lb shrimp, peeled and deveined
- 4 cups chicken broth
- 4 cups kale, chopped
- 1 can diced tomatoes
- 1 teaspoon salt
- ½ teaspoon black pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and red pepper flakes, cook for another minute.
Add shrimp and cook until pink, about 3-4 minutes.
Pour in chicken broth, bring to a boil.
Add chopped kale, diced tomatoes, salt, and black pepper.
Reduce heat and simmer for 20 minutes.
Serve hot and enjoy!
