Mexican Shrimp Cocktail Recipe

Main Ingredients
- 1 lb shrimp, cooked and peeled
- 1 cup tomato juice
- ½ cup ketchup
- ¼ cup lime juice
- 1 jalapeño, finely chopped
- ½ cup cilantro, chopped
- 1 avocado, diced
- ½ cup red onion, finely chopped
- 1 cup cucumber, diced
- to taste salt and pepper
In a large mixing bowl, combine tomato juice, ketchup, and lime juice.
Add the cooked shrimp, jalapeño, cilantro, avocado, red onion, and cucumber. Stir gently to combine.
Season with salt and pepper to taste.
Chill in the refrigerator for at least 30 minutes before serving.
