Leftover Chicken Croquettes Recipe
Great way to use up leftover chicken. Crispy on the outside, tender on the inside.

Main Ingredients
- 2 cups Leftover chicken, shredded
- 1 cup Mashed potatoes
- ½ cup Breadcrumbs
- 1 unit Egg beaten
- 1 tablespoon Parsley chopped
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
In a mixing bowl, combine chicken, mashed potatoes, breadcrumbs, egg, parsley, salt, and pepper.
Form the mixture into small patties.
Heat olive oil in a frying pan over medium heat.
Fry the patties until golden brown, about 3-4 minutes per side.
Drain on paper towels and serve hot.
