Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Potatoes, diced
  • 2 cups Fish stock
  • 1 cup Heavy cream
  • 1 lb Mixed seafood (shrimp, scallops, fish)
  • to taste Salt and pepper
  • 2 tablespoon Fresh parsley, chopped

Instructions 

  1. 1. Set the Instant Pot to sauté mode and add olive oil.
  2. 2. Add chopped onion and minced garlic. Sauté until softened.
  3. 3. Add diced potatoes and fish stock. Stir to combine.
  4. 4. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  5. 5. Once done, quick release the pressure.
  6. 6. Open the lid and set the Instant Pot to sauté mode again. Add heavy cream and mixed seafood. Cook until seafood is done.
  7. 7. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
