Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup All-purpose flour
  • 2 large Eggs beaten
  • 1 cup Shredded coconut sweetened or unsweetened
  • 1 cup Panko breadcrumbs
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 cup Vegetable oil for frying

Instructions 

  1. 1. In a bowl, mix flour, salt, and pepper.
  2. 2. In another bowl, beat the eggs.
  3. 3. In a third bowl, combine shredded coconut and panko breadcrumbs.
  4. 4. Dredge each shrimp in the flour mixture, then dip in the beaten eggs, and finally coat with the coconut-panko mixture.
  5. 5. Heat oil in a frying pan over medium heat.
  6. 6. Fry shrimp in batches until golden brown and crispy, about 2-3 minutes per side.
  7. 7. Remove and drain on paper towels. Serve hot with your favorite dipping sauce.
