Ingredients 

Main Ingredients

  • 1 kg Carrots peeled and chopped
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat some oil in a pot over medium heat. Add the onions and garlic, and sauté until softened.
  2. 2. Add the carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
  3. 3. Use a blender to puree the soup until smooth. Return to the pot.
  4. 4. Stir in the coconut milk and season with salt and pepper. Heat through before serving.
