Caprese Shrimp Salad

Main Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, cubed
- 1 cup fresh basil leaves
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- to taste salt and pepper
1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
2. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove from heat and let cool.
3. In a large mixing bowl, combine cherry tomatoes, mozzarella, and basil leaves.
4. Add the cooked shrimp to the bowl.
5. Drizzle with remaining olive oil and balsamic vinegar. Toss to combine.
6. Season with salt and pepper to taste. Serve immediately.
