Main Ingredients
- 2 cups elbow macaroni uncooked
- 3 large eggs hard-boiled and chopped
- 1 cup celery chopped
- 1 cup red bell pepper chopped
- ½ cup red onion finely chopped
Dressing Ingredients
- 2 cups mayonnaise
- ¼ cup white vinegar
- ⅓ cup sugar
- 2 tablespoon yellow mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
Cook macaroni according to package instructions. Drain and rinse with cold water.
In a large mixing bowl, whisk together mayonnaise, white vinegar, sugar, mustard, salt, and black pepper.
Add the cooked macaroni, chopped eggs, celery, red bell pepper, and red onion to the bowl. Mix well to combine.
Cover and refrigerate for at least 1 hour before serving.
