Ingredients 

Main Ingredients

  • 4 cups Zucchini shredded
  • 1 cup Onion chopped
  • 1 cup Red bell pepper chopped
  • 1 cup Green bell pepper chopped
  • 2 cups Sugar
  • 2 cups White vinegar
  • 1 tablespoon Celery seed
  • 1 tablespoon Mustard seed
  • 1 teaspoon Turmeric

Instructions 

  1. 1. In a large bowl, combine zucchini, onion, red bell pepper, and green bell pepper.
  2. 2. Add salt to the mixture and let it sit for 1 hour. Drain and rinse well.
  3. 3. In a large pot, combine sugar, vinegar, celery seed, mustard seed, and turmeric. Bring to a boil.
  4. 4. Add the drained vegetable mixture to the pot. Return to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  5. 5. Remove from heat and let cool. Transfer to sterilized jars and store in the refrigerator.
