- 2 cups Grated Zucchini
- 1 cup All-purpose Flour
- 2 large Eggs
- ½ cup Grated Parmesan Cheese
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 2 tablespoon Olive Oil for frying
Grate the zucchini and squeeze out excess moisture.
In a mixing bowl, combine grated zucchini, flour, eggs, Parmesan cheese, salt, and pepper.
Heat olive oil in a frying pan over medium heat.
Scoop batter into the pan and flatten into pancakes. Cook until golden brown on both sides.
