Vegan Lobster Rolls
A delicious vegan twist on the classic lobster roll, using hearts of palm.

Main Ingredients
- 2 cans Hearts of palm drained and chopped
- ¼ cup Vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon Lemon juice freshly squeezed
- 1 tablespoon Chopped fresh dill
- 1 teaspoon Old Bay seasoning
- 4 pieces Hot dog buns toasted
- 1 cup Shredded lettuce
In a mixing bowl, combine hearts of palm, vegan mayonnaise, Dijon mustard, lemon juice, dill, and Old Bay seasoning. Mix well.
Heat a skillet over medium heat. Toast the hot dog buns until golden brown.
Fill each toasted bun with the hearts of palm mixture and top with shredded lettuce.
