  • 4 Eggs
  • 1 cup Greek Yogurt
  • 2 cloves Garlic minced
  • 2 tablespoon Butter
  • 1 teaspoon Paprika
  • 1 teaspoon Red Pepper Flakes
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. In a mixing bowl, combine the Greek yogurt and minced garlic. Season with salt and pepper to taste. Set aside.
  2. 2. Fill a saucepan with water and bring to a gentle simmer. Add a splash of vinegar (optional) to help the eggs hold their shape.
  3. 3. Crack the eggs into separate small bowls. Create a gentle whirlpool in the simmering water and gently slide the eggs into the water. Poach for about 3-4 minutes, until the whites are set but the yolks are still runny.
  4. 4. In a small pan, melt the butter over medium heat. Once melted, add the paprika and red pepper flakes. Cook for a minute until the spices are fragrant.
  5. 5. To serve, spread the garlic yogurt on a plate. Place the poached eggs on top of the yogurt. Drizzle the spicy butter sauce over the eggs. Serve immediately.
