Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 6 cups Baby spinach
  • 1 cup Pineapple chunks
  • 1 cup Mango, diced
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Cilantro, chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. 2. Add shrimp to the skillet and cook until pink and opaque, about 4-5 minutes. Remove from heat and set aside.
  3. 3. In a large mixing bowl, combine baby spinach, pineapple chunks, mango, red onion, and cilantro.
  4. 4. In a small bowl, whisk together the remaining olive oil, lime juice, honey, salt, and black pepper.
  5. 5. Pour the dressing over the salad and toss to combine.
  6. 6. Top the salad with the cooked shrimp and serve immediately.
