Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 800 g canned tomatoes
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the canned tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the fresh basil leaves and use a blender or immersion blender to puree the soup until smooth.
  6. Season with salt and pepper to taste. Serve hot.
