Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the canned tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Add the fresh basil leaves and use a blender or immersion blender to puree the soup until smooth.
Season with salt and pepper to taste. Serve hot.
