Ingredients 

Main Ingredients

  • 4 cups Chicken broth
  • 1 cup Shrimp peeled and deveined
  • 2 stalks Lemongrass cut into 1-inch pieces
  • 3 slices Galangal
  • 3 leaves Kaffir lime leaves torn
  • 2 tablespoons Fish sauce
  • 1 tablespoon Lime juice
  • 2 cups Mushrooms sliced
  • 1 cup Cherry tomatoes halved
  • 2 pieces Thai chilies crushed
  • 1 bunch Cilantro chopped

Instructions 

  1. 1. In a pot, bring the chicken broth to a boil.
  2. 2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  3. 3. Add mushrooms, cherry tomatoes, and Thai chilies. Cook for another 5 minutes.
  4. 4. Add shrimp and cook until they turn pink.
  5. 5. Stir in fish sauce and lime juice. Adjust seasoning to taste.
  6. 6. Garnish with chopped cilantro before serving.
