Main Ingredients
- 1 lb shrimp, peeled and deveined
- ½ cup pineapple chunks
- 1 bell pepper, chopped
- ¼ cup soy sauce
- ¼ cup rice vinegar
- ¼ cup ketchup
- 2 tablespoon brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
In a bowl, mix soy sauce, rice vinegar, ketchup, and brown sugar.
In another bowl, mix cornstarch and water.
Heat oil in a pan over medium heat. Add garlic and cook until fragrant.
Add shrimp and cook until pink.
Add bell pepper and pineapple chunks, cook for 2-3 minutes.
Pour in the sauce mixture and bring to a simmer.
Stir in the cornstarch mixture and cook until the sauce thickens.
Season with salt and pepper to taste.
