Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Cucumber, sliced
  • 1 cup Cherry tomatoes, halved
  • ½ cup Red onion, thinly sliced
  • ¼ cup Fresh cilantro, chopped
  • 2 tablespoon Fish sauce
  • 2 tablespoon Lime juice
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Red chili flakes

Instructions 

  1. 1. Heat a skillet over medium heat and cook the shrimp until pink and opaque, about 3-5 minutes. Set aside to cool.
  2. 2. In a mixing bowl, combine cucumber, cherry tomatoes, red onion, and cilantro.
  3. 3. In a small bowl, whisk together fish sauce, lime juice, soy sauce, brown sugar, and red chili flakes.
  4. 4. Add the cooled shrimp to the vegetable mixture and pour the dressing over the top. Toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
