Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Red bell pepper, chopped
- 1 Jalapeño, seeded and minced
- 1 teaspoon Ground cumin
- 1 teaspoon Chili powder
- 4 cups Chicken broth
- 1 can Diced tomatoes (14.5 oz)
- 1 cup Corn kernels
- 1 Lime, juiced
- 1 cup Cilantro, chopped
- 1 Avocado, sliced for garnish
- 1 Tortilla chips for garnish
Heat olive oil in a large pot over medium heat. Add onion, garlic, red bell pepper, and jalapeño. Sauté until softened.
Add cumin and chili powder, cook for another minute.
Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
Add shrimp and corn kernels. Cook until shrimp are pink and cooked through, about 5 minutes.
Stir in lime juice and chopped cilantro. Serve hot, garnished with avocado slices and tortilla chips.
