Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Onion, chopped
  • 1 cup Green bell pepper, chopped
  • 1 cup Celery, chopped
  • 3 cloves Garlic, minced
  • 1 can Tomatoes, diced 14.5 oz can
  • 1 tablespoon Tomato paste
  • 1 cup Chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Paprika
  • ½ teaspoon Thyme, dried
  • ¼ teaspoon Cayenne pepper
  • 2 tablespoon Olive oil
  • to taste Salt and pepper
  • 2 tablespoon Fresh parsley, chopped for garnish

Instructions 

  1. 1. Heat olive oil in a large skillet over medium heat.
  2. 2. Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. 3. Stir in garlic and cook for another minute.
  4. 4. Add diced tomatoes, tomato paste, chicken broth, Cajun seasoning, paprika, thyme, and cayenne pepper. Bring to a simmer.
  5. 5. Add shrimp and cook until pink and cooked through, about 5-7 minutes.
  6. 6. Season with salt and pepper to taste.
  7. 7. Garnish with fresh parsley and serve hot.
