Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add onion, bell pepper, and celery. Cook until softened, about 5 minutes.
3. Stir in garlic and cook for another minute.
4. Add diced tomatoes, tomato paste, chicken broth, Cajun seasoning, paprika, thyme, and cayenne pepper. Bring to a simmer.
5. Add shrimp and cook until pink and cooked through, about 5-7 minutes.
6. Season with salt and pepper to taste.
7. Garnish with fresh parsley and serve hot.
