Spicy Shrimp and Sweet Potato Soup

Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 2 medium Sweet Potatoes, peeled and diced
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 4 cups Chicken Broth
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Paprika
- to taste Salt and Pepper
1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
2. Add minced garlic and cook for another minute.
3. Add diced sweet potatoes, chicken broth, cayenne pepper, and paprika. Bring to a boil.
4. Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
5. Add shrimp and cook until pink and opaque, about 3-5 minutes.
6. Season with salt and pepper to taste. Serve hot.
