Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 can Red beans, drained and rinsed 15 oz can
  • 1 cup Diced tomatoes
  • 1 cup Chicken broth
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Chili powder
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, cumin, paprika, and chili powder. Cook for another minute.
  4. Add diced tomatoes, chicken broth, and red beans. Bring to a simmer.
  5. Add shrimp and cook until they turn pink, about 5 minutes.
  6. Season with salt and pepper to taste. Serve hot.
