Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 can Coconut milk 13.5 oz
  • 1 cup Chicken broth
  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Red curry paste
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 Lime, juiced
  • 2 tablespoon Cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  2. Add minced garlic and red curry paste. Cook for another minute.
  3. Pour in the coconut milk and chicken broth. Bring to a simmer.
  4. Add shrimp, salt, and pepper. Cook until shrimp are pink and cooked through.
  5. Remove from heat. Use a blender to puree the soup until smooth.
  6. Stir in lime juice and chopped cilantro before serving.
