  • 4 units Potatoes peeled and thinly sliced
  • 1 unit Onion finely chopped
  • 6 units Eggs
  • ½ cup Olive oil
  • to taste Salt

Instructions 

  1. Heat olive oil in a frying pan over medium heat.
  2. Add potatoes and onions, cook until tender.
  3. Beat eggs in a bowl, season with salt.
  4. Pour eggs over the potatoes and onions in the pan.
  5. Cook on low heat until eggs are set.
  6. Flip the omelet to cook the other side.
  7. Serve warm.
