Southern Dill Potato Salad

Main Ingredients
- 2 pounds potatoes peeled and cubed
- 1 cup mayonnaise
- 2 tablespoons dill pickle relish
- 1 tablespoon fresh dill chopped
- 1 teaspoon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 units hard-boiled eggs chopped
- ½ cup celery chopped
- ¼ cup red onion finely chopped
1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and let cool.
2. In a large mixing bowl, combine the mayonnaise, dill pickle relish, fresh dill, mustard, salt, and black pepper.
3. Add the cooled potatoes, hard-boiled eggs, celery, and red onion to the bowl. Mix gently to combine.
4. Chill in the refrigerator for at least 1 hour before serving.
