  • 3 pounds corned beef brisket
  • 1 large head of cabbage cut into wedges
  • 6 medium carrots peeled and cut into chunks
  • 8 small red potatoes halved
  • 4 cups water

Instructions 

  1. Place corned beef brisket into the slow cooker.
  2. Add water to cover the brisket.
  3. Add potatoes, carrots, and cabbage around the brisket.
  4. Cover and cook on low for 8 hours.
  5. Remove brisket and let rest for 10 minutes before slicing.
  6. Serve with vegetables and some of the cooking liquid.
