Shrimp Vermicelli Salad Recipe

Main Ingredients
- 200 g vermicelli noodles
- 250 g shrimp, peeled and deveined
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- ½ cup fresh herbs (mint, cilantro, basil)
- ¼ cup crushed peanuts
Dressing
- 3 tablespoon fish sauce
- 2 tablespoon lime juice
- 1 tablespoon sugar
- 1 clove garlic, minced
- 1 teaspoon chili flakes
1. Cook vermicelli noodles according to package instructions. Drain and set aside.
2. In a pot, bring water to a boil and cook shrimp until pink and opaque, about 2-3 minutes. Drain and set aside.
3. In a large bowl, combine vermicelli noodles, shrimp, shredded carrots, cucumber, and fresh herbs.
4. In a small bowl, whisk together fish sauce, lime juice, sugar, minced garlic, and chili flakes to make the dressing.
5. Pour the dressing over the salad and toss to combine. Top with crushed peanuts before serving.
