Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes, halved
  • ½ cup Cucumber, sliced
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Feta cheese, crumbled
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Cook the shrimp in boiling water for 3-5 minutes until pink and opaque. Drain and set aside to cool.
  2. 2. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. 3. Add the cooled shrimp to the salad.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  5. 5. Drizzle the dressing over the salad and toss gently to combine.
  6. 6. Serve immediately or refrigerate for up to 2 hours before serving.
