Ingredients

  • 1 lb Shrimp, peeled and deveined medium size
  • 8 pieces Flour tortillas
  • 1 cup Shredded cheese cheddar or Mexican blend
  • ¼ cup Fresh cilantro, chopped
  • 1 tablespoon Olive oil
  • 1 tablespoon Lime juice freshly squeezed
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. In a bowl, combine shrimp, olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Mix well.
  2. 2. Heat a skillet over medium-high heat. Add the shrimp mixture and cook for 3-4 minutes until shrimp are pink and cooked through. Remove from heat.
  3. 3. Wipe the skillet clean. Place a tortilla in the skillet, sprinkle with cheese, add cooked shrimp, and top with cilantro. Place another tortilla on top.
  4. 4. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas.
  5. 5. Cut quesadillas into wedges and serve warm.
