Shrimp Quesadillas with Cilantro and Lime

Main Ingredients
- 1 lb Shrimp, peeled and deveined medium size
- 8 pieces Flour tortillas
- 1 cup Shredded cheese cheddar or Mexican blend
- ¼ cup Fresh cilantro, chopped
- 1 tablespoon Olive oil
- 1 tablespoon Lime juice freshly squeezed
- 1 teaspoon Garlic powder
- 1 teaspoon Cumin
- 1 teaspoon Salt
- ½ teaspoon Black pepper
1. In a bowl, combine shrimp, olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Mix well.
2. Heat a skillet over medium-high heat. Add the shrimp mixture and cook for 3-4 minutes until shrimp are pink and cooked through. Remove from heat.
3. Wipe the skillet clean. Place a tortilla in the skillet, sprinkle with cheese, add cooked shrimp, and top with cilantro. Place another tortilla on top.
4. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas.
5. Cut quesadillas into wedges and serve warm.
