Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 8 oz Rice noodles
- 4 cups Chicken broth
- 1 Carrot, julienned
- 1 Red bell pepper, sliced
- 2 cloves Garlic, minced
- 1 tablespoon Soy sauce
- 1 teaspoon Sesame oil
- 1 teaspoon Ginger, grated
- 2 stalks Green onions, chopped
- to taste Salt and pepper
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for about 1 minute.
3. Add the chicken broth, soy sauce, carrot, and red bell pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
4. Add the shrimp and cook until they turn pink, about 3-4 minutes.
5. Add the cooked noodles to the pot and stir to combine. Season with salt and pepper to taste.
6. Serve hot, garnished with chopped green onions.
