Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 8 oz Rice noodles
  • 4 cups Chicken broth
  • 1 Carrot, julienned
  • 1 Red bell pepper, sliced
  • 2 cloves Garlic, minced
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Ginger, grated
  • 2 stalks Green onions, chopped
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for about 1 minute.
  3. 3. Add the chicken broth, soy sauce, carrot, and red bell pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. 4. Add the shrimp and cook until they turn pink, about 3-4 minutes.
  5. 5. Add the cooked noodles to the pot and stir to combine. Season with salt and pepper to taste.
  6. 6. Serve hot, garnished with chopped green onions.
