  • 1 lb Shrimp peeled and deveined
  • 2 cups Watermelon cubed
  • 1 cup Goat Cheese crumbled
  • 1 cup Arugula
  • 2 tablespoon Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Preheat grill to medium-high heat.
  2. 2. Toss shrimp with 1 tablespoon of olive oil, salt, and pepper.
  3. 3. Grill shrimp for 2-3 minutes on each side until pink and opaque.
  4. 4. In a mixing bowl, combine watermelon, goat cheese, arugula, and grilled shrimp.
  5. 5. Drizzle with remaining olive oil and balsamic vinegar. Toss gently to combine.
  6. 6. Serve immediately.
