Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 4 cups Tomatoes, chopped
  • 1 cup Cucumber, diced
  • 1 cup Red bell pepper, diced
  • ¼ cup Red onion, chopped
  • 2 cloves Garlic, minced
  • 3 tablespoon Olive oil
  • 2 tablespoon Red wine vinegar
  • 2 cups Tomato juice
  • to taste Salt and pepper

Instructions 

  1. 1. In a blender, combine tomatoes, cucumber, bell pepper, red onion, garlic, olive oil, red wine vinegar, and tomato juice. Blend until smooth.
  2. 2. Season with salt and pepper to taste. Chill in the refrigerator for at least 2 hours.
  3. 3. Before serving, stir in the shrimp. Serve cold.
