Ingredients 

Main Ingredients

  • 1 lb Shrimp peeled and deveined
  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. 2. Add shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and set aside.
  3. 3. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. 4. In a small bowl, whisk together remaining olive oil, lemon juice, salt, and black pepper.
  5. 5. Drizzle the dressing over the salad and toss to combine.
  6. 6. Top the salad with cooked shrimp and serve immediately.
