Ingredients 

Main Ingredients

  • 2 cups Cooked rice
  • 1 lb Shrimp, peeled and deveined
  • 2 tablespoon Soy sauce
  • 2 tablespoon Vegetable oil
  • 1 cup Frozen peas and carrots
  • 2 cloves Garlic, minced
  • 2 large Eggs, beaten
  • 3 stalks Green onions, chopped

Instructions 

  1. 1. Heat 1 tablespoon of oil in a wok over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes. Remove and set aside.
  2. 2. In the same wok, add remaining oil. Add garlic and cook until fragrant, about 30 seconds.
  3. 3. Add peas and carrots, cook for 2-3 minutes until tender.
  4. 4. Push veggies to the side, pour in beaten eggs and scramble until fully cooked.
  5. 5. Add cooked rice and shrimp back into the wok. Pour soy sauce over and stir to combine.
  6. 6. Stir in green onions and cook for another 2 minutes. Serve hot.
