Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry powder
  • 1 cup Coconut milk
  • 1 cup Diced tomatoes
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Fresh cilantro, chopped for garnish

Instructions 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Stir in the curry powder and cook for another minute.
  4. Add the coconut milk, diced tomatoes, salt, and pepper. Bring to a simmer.
  5. Add the shrimp and cook until they are pink and opaque, about 5-7 minutes.
  6. Garnish with fresh cilantro and serve hot.
