Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 lb shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Cook couscous according to package instructions. Set aside to cool.
  2. In a large bowl, combine cooked couscous, shrimp, cherry tomatoes, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  4. Pour dressing over the couscous mixture and toss to combine.
  5. Serve immediately or refrigerate for later.
