Main Ingredients
- 1 lb Shrimp peeled and deveined
- 2 tablespoon Butter
- 1 cup Onion chopped
- 2 cloves Garlic minced
- 1 cup Tomato paste
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and garlic, and sauté until translucent.
3. Stir in the tomato paste and cook for another 2 minutes.
4. Add the shrimp and cook until pink.
5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
6. Use a blender to puree the soup until smooth.
7. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper.
8. Simmer for another 10 minutes, then serve hot.
