Ingredients 

Main Ingredients

  • 8 oz Pasta any short pasta
  • 1 lb Shrimp peeled and deveined
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Fresh Basil chopped

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and set aside.
  2. 2. In a large pot, bring water to a boil and cook shrimp until pink and opaque, about 3-4 minutes. Drain and set aside.
  3. 3. In a large mixing bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  5. 5. Pour the dressing over the pasta mixture and toss to combine.
  6. 6. Garnish with fresh basil and serve chilled or at room temperature.
