Instructions
Cook pasta shells according to package instructions. Drain and rinse under cold water.
In a large pot, bring water to a boil. Add shrimp and cook until pink and opaque, about 2-3 minutes. Drain and let cool.
In a large mixing bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.
Chill in the refrigerator for at least 30 minutes before serving.
