Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 Avocados, diced
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, finely chopped
  • 2 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 1 tablespoon Cilantro, chopped
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the shrimp in a skillet over medium heat until pink and opaque, about 3-5 minutes.
  2. 2. In a large mixing bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, and red onion.
  3. 3. Drizzle with lime juice and olive oil. Add chopped cilantro, salt, and pepper to taste. Toss gently to combine.
  4. 4. Serve immediately or chill in the refrigerator for 10-15 minutes before serving.
