Seafood Risotto Recipe

Main Ingredients
- 1 cup Arborio rice
- 2 tablespoon Olive oil
- 1 cup White wine
- 4 cups Chicken broth or seafood broth
- 1 cup Mixed seafood shrimp, scallops, and mussels
- 1 cup Parmesan cheese grated
- 1 small Onion finely chopped
- 2 cloves Garlic minced
- to taste Salt and pepper
Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and cook until softened.
Add the Arborio rice and stir to coat with the oil. Cook for 2-3 minutes until the rice is lightly toasted.
Pour in the white wine and cook, stirring constantly, until the wine is absorbed.
Begin adding the broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next. Continue until the rice is creamy and cooked through.
Stir in the mixed seafood and cook until the seafood is just cooked through.
Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. Serve immediately.
