Ingredients 

Main Ingredients

  • 1 lb Mixed seafood (shrimp, scallops, etc.)
  • 2 tablespoon Olive oil
  • 1 cup Chicken broth
  • ¼ cup Lemon juice freshly squeezed
  • 2 tablespoon Capers drained
  • 2 tablespoon Parsley chopped
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add seafood and cook until just opaque, about 3-4 minutes per side. Remove and set aside.
  3. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a boil.
  4. Return seafood to the skillet and simmer for another 5 minutes.
  5. Garnish with parsley and season with salt and pepper to taste. Serve immediately.
