Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Tomato, grated
  • 1 cup Bomba Rice
  • 2 cups Chicken Broth
  • 1 pinch Saffron Threads soaked in 2 tablespoon warm water
  • 1 lb Mixed Seafood (shrimp, mussels, clams, squid)
  • 1 cup Green Peas
  • 1 teaspoon Paprika
  • to taste Salt and Pepper
  • 1 lemon Lemon, cut into wedges for serving

Instructions 

  1. Heat olive oil in a paella pan over medium heat. Add onion and garlic, cook until softened.
  2. Add grated tomato, cook for a few minutes until it thickens.
  3. Stir in the rice, coating it well with the tomato mixture.
  4. Pour in the chicken broth and saffron with its soaking water. Bring to a boil, then reduce to a simmer.
  5. Add the mixed seafood, peas, and paprika. Season with salt and pepper.
  6. Cook without stirring for about 20 minutes, until the rice is tender and the seafood is cooked through.
  7. Remove from heat, cover with a clean kitchen towel, and let rest for 5 minutes.
  8. Serve with lemon wedges.
