Seafood Cioppino

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 cup dry white wine
- 1 can crushed tomatoes (28 oz)
- 2 cups fish stock
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 lb clams, scrubbed
- 1 lb mussels, scrubbed
- 1 lb shrimp, peeled and deveined
- 1 lb firm white fish, cut into chunks
- to taste salt and pepper
- ¼ cup fresh parsley, chopped
Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell peppers. Cook until softened.
Add white wine and bring to a simmer. Cook for 5 minutes.
Add crushed tomatoes, fish stock, oregano, and thyme. Simmer for 20 minutes.
Add clams and mussels. Cover and cook until they open, about 5 minutes.
Add shrimp and fish. Cook until shrimp are pink and fish is opaque, about 5 minutes. Season with salt and pepper.
Garnish with fresh parsley before serving.
