Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 lb Scallops
  • 2 cups Cherry Tomatoes, halved
  • 1 cup Bell Peppers, diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 cloves Garlic, minced
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Fresh Parsley, chopped

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shrimp, scallops, cherry tomatoes, and bell peppers.
  3. Add olive oil, salt, black pepper, garlic, and lemon juice. Toss to coat evenly.
  4. Transfer the mixture to a baking dish and cover with aluminum foil.
  5. Bake in the preheated oven for 30-40 minutes, or until the seafood is cooked through.
  6. Remove from the oven, sprinkle with fresh parsley, and serve hot.
