Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and thinly sliced
  • 1 medium Butternut Squash peeled and thinly sliced
  • 1 cup Heavy Cream
  • 1 cup Milk
  • 2 cloves Garlic minced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Grated Parmesan Cheese

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, combine heavy cream, milk, garlic, salt, and pepper. Heat until just about to boil, then remove from heat.
  3. Layer half of the sweet potatoes and butternut squash in a greased baking dish. Pour half of the cream mixture over the layers. Repeat with the remaining sweet potatoes, butternut squash, and cream mixture.
  4. Sprinkle the grated Parmesan cheese on top.
  5. Cover with aluminum foil and bake for 40 minutes. Remove the foil and bake for an additional 20 minutes, or until the top is golden and the vegetables are tender.
  6. Let it rest for 10 minutes before serving.
