Scalloped Potatoes with Green Chiles Recipe

Main Ingredients
- 4 large potatoes thinly sliced
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 can diced green chiles 4 oz
- ¼ cup butter
- ¼ cup all-purpose flour
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes.
Gradually whisk in milk and heavy cream. Cook until thickened.
Stir in cheese until melted. Add green chiles, salt, and pepper.
Layer half of the potatoes in a baking dish. Pour half of the cheese sauce over the potatoes.
Repeat with remaining potatoes and sauce.
Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden and bubbly.
