Scallop and Shrimp Salad

Main Ingredients
- 1 lb scallops
- 1 lb shrimp, peeled and deveined
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup olive oil
- 2 tablespoon lemon juice
- Salt and pepper to taste
Season scallops and shrimp with salt and pepper.
Heat olive oil in a pan over medium heat.
Cook scallops for 2-3 minutes on each side until golden brown. Remove and set aside.
In the same pan, cook shrimp for 2-3 minutes until pink and opaque. Remove and set aside.
In a large bowl, combine mixed greens, cherry tomatoes, avocado, and red onion.
Add cooked scallops and shrimp to the salad.
Drizzle with lemon juice and additional olive oil if needed.
Toss gently to combine and serve immediately.
