Ingredients

  • 1 lb Italian sausage casings removed
  • 4 potatoes peeled and diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups kale chopped
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  2. 2. In the same pot, add the onions and garlic. Cook until softened.
  3. 3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. 4. Return the sausage to the pot. Stir in the kale and heavy cream. Cook until kale is wilted.
  5. 5. Season with salt and pepper to taste. Serve hot.
